What better a treat for the first summer day than a bit of homemade elderflower jelly? I made a huge batch of elderflower cordial last june, and STILL haven't got through all of it so I thought I'd better hurry up before it gets mouldy (well... too mouldy).
All I needed to do was make up a fairly strong pint of elderflower and water, soak 4 gelatine leaves in cold water, heat the cordail/water mix until fairly hot but not boiling, then melt the gelatine in and put onto glasses! Pretty easy really. After cooling for a little bit, I put them in the fridge overnight and their done! I think upon reflection I would add one more leaf of gelatine as I like quite a hard set jelly, but I'm pretty impressed with how easy these were to make. I can't wait for the blackberry season as I have a hunch they would make a gorgeous jelly, perhaps with a few wild strawberries added? I had better stock up on gelatine!
